Pork chops with Summer Peach Chutney

Throughout the year, I enjoy incorporating fresh seasonal ingredients into all of my meal preparation. This recipe utilizes fresh peaches and herbs to create a delicious chutney to be used as a glaze or sauce (although it can stand alone on it’s own), which is the perfect accompaniment for pork chops, pork loin, chicken, and even fatty fish. Feel free to try this chutney recipe using your favorite seasonal fruit, depending upon the time of year i.e. apples, pears, raisins, plums, pineapple, etc. Perfect for a sandwich spread too!

Ingredients

4 center cut pork chops, seasoned with salt and pepper

2 firm peaches, diced

2 sprigs of fresh rosemary, chopped

1 medium onion, diced

2 cloves garlic minced

2 tablespoons unsalted butter

1 tablespoon extra virgin olive oil

1 teaspoon ground cumin

1 tablespoon ground ginger

1 tablespoon cayenne pepper

1 teaspoon cinnamon

1 16 ounce jar of apricot, peach, or passion fruit jelly/preserves

Directions

Heat butter and olive oil in a heavy sauce pan. Once melted add garlic. Cook over medium-low heat, be careful not to burn garlic for it will become bitter. Add diced onions. Cook for 5-10 minutes, until onions are translucent.

Saute

Add diced peaches with pit removed and rosemary to the same pot. Cook on medium low until peaches are softened.

Next add all seasoning listed above. Turn fire down to low and cook another 5-10 minutes, stirring every few minutes. Add 16 ounces of fruit jelly/preserves. Increase temperature to medium. Cook until jelly is liquefied.  Then turn sauce pan to low.

While chutney is simmering on low cook the seasoned pork chops. You may broil them in the oven, grill them on the bbq grill or in a grill pan, or saute the pork chops in a separate pan until no longer pink. Be careful not to overcook the pork chops. Remove pork chops from grill, oven or stove top, and place in sauce pan with chutney. Make sure that chutney covers pork chops. Simmer pork chops in sauce for 10-15 minutes.

Serve pork chops a topped with chutney and your favorite roasted vegetable combination (see previous post for recipe ideas). Enjoy!
