An easy breakfast hash that will be a colorful addition to your Sunday Brunch menu or a healthy and quick weekday breakfast item! Simply dice and freeze sweet potatoes for quick addition and future meal preparation. Like many of my recipes, this can be adjusted for vegetarian/vegan eaters.
1 yellow onion diced
1 bell pepper diced (orange or red)
2 sweet potatoes peeled and diced
2 habaneros diced (optional)
1/2 pack of Jimmy Dean Turkey Sausage Crumbles or your favorite turkey sausage cooked and fat drained
3 tablespoons olive oil
1 tablespoon water
Salt and Pepper to taste
In heavy pot heat 2 tablespoons of olive oil
Once heated, add diced sweet potatoes tossing them in the olive oil. Turn heat to low.
Next add onions, bell pepper, and habanero peppers. Stir.
Add additional table spoons of oil to coat all vegetables and water. Put lid on pot and simmer/steam on low.
Let simmer 5-10 minutes or until potatoes are tender.
Add cooked sausage and season with salt and pepper.
Serve and Enjoy!
